Arequipa is built almost entirely from sillar, the pale volcanic stone that gives the old centre its glare and the city its name, la ciudad blanca. Three volcanoes stand over it, Misti, Chachani and Pichu Pichu, framed by the stone arches of the Yanahuara Viewpoint. Santa Catalina Monastery is a walled town of its own, twenty thousand square metres of blue and ochre lanes that stayed closed to outsiders for nearly four hundred years. Museo Santuarios Andinos holds Juanita, an Inca girl found frozen on a nearby summit, offered to the mountains five centuries ago. Arequipeños are stubborn about their independence and prouder still of their food, argued to be Peru's best and eaten in picanterías: river-prawn chowder, stuffed rocoto peppers, slow-cooked meats. Colca Canyon drops twice as deep as the Grand Canyon, and condors pass close at Cruz del Cóndor.

Santa Catalina Monastery
A convent founded in 1579 and large enough to form a walled quarter of its own, with lanes named after Spanish cities and cells painted ochre and blue. Open to the public since 1970, with nuns still living in a closed wing.
Yanahuara Viewpoint
The lookout in the Yanahuara district, with sillar arches carved with quotations and a head-on view of El Misti. About twenty minutes on foot from the Plaza de Armas; morning light shows the volcanoes most clearly.
Colca Canyon
One of the world's deepest canyons at 3,270 metres, where condors rise on the thermals above the Cruz del Cóndor viewpoint. Five hours' drive from Arequipa; the birds appear early in the morning, which means a night departure or a night in Chivay.

A viewpoint over the Colca Canyon where Andean condors ride the updraught along the rim, at times only metres from the railing. They appear mainly in the morning, which is when the groups arrive from Chivay.
Sabandía Mill
A colonial water mill from 1621, built in sillar stone and put back to work after restoration. Eight kilometres from the centre in the Sabandía countryside, where the miller still turns the stone for visitors.
Salinas y Aguada Blanca National Reserve
A high-altitude reserve above 4,000 metres, home to vicuñas and flamingos around the Salinas lagoon. The Colca road crosses it; the climb from Arequipa is abrupt, so carry water and a warm layer.
